To make these 3 ingredient cookies, you'll need:
- strawberry cake mix: In 2023, when this recipe was first created, a box of Betty Crocker Super Moist cake mix weighed 15.25 ounces. As of January 2025, the weight is now 13.25 ounces.
Honestly, a difference of 2 ounces isn't going to affect the flavor or texture of the strawberry cookies at all. If anything, you may only be able to make 46 cookies instead of 48.
- 1 cup of vegetable oil
- 2 large eggs

Substitutions and Recipe Variations
- cake mix: Feel free to use any brand or flavor of store-bought or homemade cake mix. I have recipes for Chocolate, Lemon, and Funfetti. There are many different brands of strawberry cake mix, including Duncan Hines, Pillsbury and Betty Crocker.
- oil: Instead of vegetable oil, you can substitute any neutral flavor of cooking oil, like canola or sunflower oil.
- eggs: Egg yolks contribute moisture and structure to the cake mix cookies. I haven't tested the recipe using any egg substitutes, but if you want to use one, there are few recommendations in my post, Egg Substitute for Cake Mix.

- Make the strawberry cookie dough.

- Portion the dough onto a baking sheet.

- Bake at 350°F. for 10-12 minutes.

- Cool cookies on the pan for 5 minutes.
Liz's Tips for the Best Cake Mix Cookies
- Expect the dough to be thinner. With only 3 ingredients, this dough is much thinner than traditional cookie dough.
- Line the baking sheet with parchment paper or a silicone baking mat. There isn't much fat in strawberry cake mix cookies, so they are more likely to stick to the pan.
- Use a cookie scoop to ensure that they're all the same size, and that they bake evenly.
- Let the cookies cool on the baking sheet for 5 minutes. Cake mix cookies are very soft, and if you try to move them to a cooling rack too soon, they'll fall apart.
Decorating Ideas
I like the simplicity of an undecorated cookie, but you can definitely decorate them!

Ingredients
- 15.25 ounces strawberry cake mix *See Notes
- ½ cup vegetable oil
- 2 eggs
Instructions
- Preheat your oven to 350° F. Line two baking sheets with parchment paper or a silicone baking mat. Set aside.
- To a large mixing bowl, add dry cake mix, oil, and eggs. Using a whisk or large mixing spoon, stir to combine.
- Using a 2-tablespoon cookie scoop or soup spoon, portion and arrange balls of dough 2 inches apart on the prepared baking sheets.
- Bake in preheated oven for 10-12 minutes, until the edges are light golden brown. **The center of the cookies may not be full set, and that is okay- they will continue baking as they cool on the pan after they're out of the oven.
- Let the cookies cool on the pan for at least 5 minutes, then transfer to a wire rack to cool completely.
