When you need a quick treat or dessert in a hurry, these 3 ingredient cookies are a go-to. They're super cakey, soft, and SO delicious.

Strawberry desserts are always a favorite for Valentine's Day, and because they're nut-free, they're perfect to send to a school party.

    Why You'll Love This Recipe

    1. Easy To Make: Even if you're not a baker, you can make these cake mix cookies! I promise they're so simple!
    2. Cheap to make: These cookies only have 3 ingredients that are relatively inexpensive!
    3. Less Dishes: One bowl and mixer or spatula are all you need to make these delicious cookies!

Do you love strawberry desserts that are easy to make? If so, you can also make recipes for strawberry brownies, strawberry frosted vanilla cupcakes, and strawberry chocolate marble cake.

    Ingredients

See ingredient substitutions in the next section. ⬇️

To make these 3 ingredient cookies, you'll need:

    • strawberry cake mix: In 2023, when this recipe was first created, a box of Betty Crocker Super Moist cake mix weighed 15.25 ounces. As of January 2025, the weight is now 13.25 ounces.

Honestly, a difference of 2 ounces isn't going to affect the flavor or texture of the strawberry cookies at all. If anything, you may only be able to make 46 cookies instead of 48.

    • 1 cup of vegetable oil
    • 2 large eggs
Two eggs, a small dish of vegetable oil, and a box of cake mix sitting on a gray background.

    Substitutions and Recipe Variations

    • cake mix: Feel free to use any brand or flavor of store-bought or homemade cake mix. I have recipes for Chocolate, Lemon, and Funfetti. There are many different brands of strawberry cake mix, including Duncan Hines, Pillsbury and Betty Crocker.
    • oil: Instead of vegetable oil, you can substitute any neutral flavor of cooking oil, like canola or sunflower oil.
    • eggs: Egg yolks contribute moisture and structure to the cake mix cookies. I haven't tested the recipe using any egg substitutes, but if you want to use one, there are few recommendations in my post, Egg Substitute for Cake Mix.

    1. Cool cookies on the pan for 5 minutes.

Liz's Tips for the Best Cake Mix Cookies

    1. Expect the dough to be thinner. With only 3 ingredients, this dough is much thinner than traditional cookie dough.
    2. Line the baking sheet with parchment paper or a silicone baking mat. There isn't much fat in strawberry cake mix cookies, so they are more likely to stick to the pan.
    3. Use a cookie scoop to ensure that they're all the same size, and that they bake evenly.
    4. Let the cookies cool on the baking sheet for 5 minutes. Cake mix cookies are very soft, and if you try to move them to a cooling rack too soon, they'll fall apart.

    Decorating Ideas

I like the simplicity of an undecorated cookie, but you can definitely decorate them!

    • Make crinkle cookies: Roll the dough in powdered sugar before baking (like these Chocolate Cake Mix Cookies).
    • Add sprinkles to the batter (like these Funfetti Cake Cookies)
    • Frost them: The strawberry cookies would be delicious with buttercream frosting or cream cheese frosting.

    Storing and Freezing Instructions

Storing: The strawberry cookies will stay fresh for about 5 days in an airtight container at room temperature.

Freezing: You can freeze the cake mix cookies for up to 3 months in an airtight container. Thaw completely before enjoying.

For the best flavor and texture, enjoy them while they're fresh. They can get a little soggy in the refrigerator.

Strawberry Cake Mix Cookie Recipe FAQ

What is the difference between cake mix and cookie mix?

Cake mix and cookie mix differ in ingredients, cooking time, and temperature, While cake mix creates a light and fluffy dessert, cookie mix creates a dense, chewy cookie.

What makes a cookie chewy vs soft?

Two ways to make soft cookies chewier are to bake them at a higher temperature, or to add more moisture to the cookie dough.

    Ingredients

    • 15.25 ounces strawberry cake mix *See Notes
    • ½ cup vegetable oil
    • 2 eggs

    Instructions

    • Preheat your oven to 350° F. Line two baking sheets with parchment paper or a silicone baking mat. Set aside.
    • To a large mixing bowl, add dry cake mix, oil, and eggs. Using a whisk or large mixing spoon, stir to combine.
    • Using a 2-tablespoon cookie scoop or soup spoon, portion and arrange balls of dough 2 inches apart on the prepared baking sheets.
    • Bake in preheated oven for 10-12 minutes, until the edges are light golden brown. **The center of the cookies may not be full set, and that is okay- they will continue baking as they cool on the pan after they're out of the oven.
    • Let the cookies cool on the pan for at least 5 minutes, then transfer to a wire rack to cool completely.

I made these cookies with pineapple cake mix and they were delicious! Have you tried making them with a gluten free cake mix?
