Ingredients and Substitutions
To make Funfetti cake mix cookies, you'll need:
- 15.25 ounce box of Funfetti cake mix: Some companies have cut back on the amount of mix they put in each package. The mix you buy may have a little more or a little less than 15 ounces, and that's okay- it should still work with this recipe.
- vegetable oil: Good substitutes for vegetable oil are canola oi, avocado oil, or any other mild flavor cooking oil.
- eggs: The eggs provide structure and moisture to the cookies. Because there are so few ingredients in this recipe, it may be difficult to find an egg substitute that will work well. You can do some testing on your own if you want. There are some tips and suggestions in my post, Egg Substitute for Cake Mix.
- sprinkles: Feel free to swap out the multi-colored sprinkles for any color combination you like. If you have any left over, use them to make confetti cupcakes!

Storage and Freezing
The Funfetti cookies will stay fresh for about 4 days in an airtight container at room temperature.
Freezing: Although they taste the best when they're freshly baked, the cake mix cookies will keep for about 3 months if they're stored in a freezer-safe container or Ziploc bag.
Thaw them at room temp, or pop them in the microwave to warm them up.
Freezing Cookie Dough: I don't recommend freezing cake mix cookie dough - it doesn't hold up well.

Funfetti Cake Mix Cookies FAQ
Boxed cake mix and cookie mix differ in ingredients, cooking time and temperature, and the final flavor and texture. Cake mix creates a light and fluffy cake, while cookie mix creates a denser, chewier cookie.
For this recipe, it's best to stir the sprinkles into the batter before baking. If you add sprinkles on top, you will want to add them before baking to ensure they stick.
