    With only four ingredients, these cake mix cookies are super simple to make, but they taste like they are made from scratch.

    The cake mix provides a classic birthday cake flavor, while the additional sprinkles add a slightly crunchy texture and an extra burst of sweetness. Plus, they're festive and adorable!

    Ingredients and Substitutions

    To make Funfetti cake mix cookies, you'll need:

    • 15.25 ounce box of Funfetti cake mix: Some companies have cut back on the amount of mix they put in each package. The mix you buy may have a little more or a little less than 15 ounces, and that's okay- it should still work with this recipe.
    • vegetable oil: Good substitutes for vegetable oil are canola oi, avocado oil, or any other mild flavor cooking oil.
    • eggs: The eggs provide structure and moisture to the cookies. Because there are so few ingredients in this recipe, it may be difficult to find an egg substitute that will work well. You can do some testing on your own if you want. There are some tips and suggestions in my post, Egg Substitute for Cake Mix.
    • sprinkles: Feel free to swap out the multi-colored sprinkles for any color combination you like. If you have any left over, use them to make confetti cupcakes!

    1. Combine the cake mix, eggs, oil, and sprinkles.

    1. Bake in preheated oven until edges are very light brown.

    Storage and Freezing

    The Funfetti cookies will stay fresh for about 4 days in an airtight container at room temperature.

    Freezing: Although they taste the best when they're freshly baked, the cake mix cookies will keep for about 3 months if they're stored in a freezer-safe container or Ziploc bag.

    Thaw them at room temp, or pop them in the microwave to warm them up.

    Freezing Cookie Dough: I don't recommend freezing cake mix cookie dough - it doesn't hold up well.

    What is the difference between cake mix and cookie mix?

    Boxed cake mix and cookie mix differ in ingredients, cooking time and temperature, and the final flavor and texture. Cake mix creates a light and fluffy cake, while cookie mix creates a denser, chewier cookie.

    Is it better to put sprinkles on cookies before or after baking?

    For this recipe, it's best to stir the sprinkles into the batter before baking. If you add sprinkles on top, you will want to add them before baking to ensure they stick.

    Ingredients

    • 15.25 ounces Funfetti cake mix
    • ½ cup vegetable oil
    • 2 large eggs
    • ½ cup sprinkles optional

    Instructions

    • Preheat your oven to 350° F and line two baking sheets with parchment paper.
    • In a mixing bowl, use a spoon to stir together dry cake mix, oil and eggs. Add sprinkles and stir to combine.
    • Using a medium spoon or 2-tablespoon scoop, portion cookie dough onto parchment lined baking sheet, leaving about 2 inches between each.
    • Bake in preheated oven for 10-12 minutes, or until the edges are just barely golden brown.
    • Let the cookies cool on the pan for at least 5 minutes, then transfer to a cooling rack to cool completely.

    Helpful Notes and Tips From Liz

     
    • Feel free to use a different color of sprinkles. You can swap out the multi-colored sprinkles for a single color or a color combination.
    • Store Funfetti cookies at room temperature. They will stay fresh in an airtight container for about 4 days.
