    Whether you are using a boxed cake mix making your favorite recipe, you can use these simple egg substitutions to create a delicious dessert!

    The Purpose of Eggs in Cake

    Eggs play many roles that help in achieving a delicious cake.

    The protein and fat in eggs add structure, moisture, and flavor to a cake. In particular, the egg yolks, which are rich in fat, provide richness, tenderness, and a smooth consistency.

    At the time of this post update (April 2025), the average cost for a dozen eggs in the U.S. is $6.98, and it continues to rise!

    If you aren't interested in raising laying hens in your back yard, you may be looking for a more budget-friendly option. Fortunately, there are several fantastic ways to make cake without eggs!

    Affordable Egg Substitutes for Cake Mix

    Let's start with some dairy-free and vegan egg substitutes. All of these options are easy to find at most larger grocery stores.

    Applesauce

    Applesauce is one of my favorite substitutions for eggs in cakes. This simple ingredient will stabilize your cake and give it a light fluffy texture without affecting the flavor.

    To ensure that your cake isn't too sweet, opt for unsweetened applesauce. Also, be sure that it doesn't include spices or other flavors.

    Use ¼ cup unsweetened applesauce for each egg the cake mix calls for.

    Ground Flaxseed or Flax Meal

    Whether you're using a boxed mix or making cake from scratch, flaxseed is an excellent egg substitute for cakes.

    Keep this shelf-stable vegan egg substitute on hand, because it can be used for nearly any baking recipe.

    To make 1 flax egg: Mix 1 tablespoon ground flaxseed with 3 tablespoons water and let sit for 5 minutes before using it.

    Silken Tofu

    Silken tofu makes a wonderful vegan substitute for eggs because it doesn't affect the overall flavor of whatever you are baking.

    To replace an egg with tofu, use ¼ cup silken tofu for each egg in a cake. Blend tofu until creamy and stir into the cake batter.

    Carbonated Soda as an Egg Substitute

    You can add a hint of flavor to any boxed cake mix by swapping out the eggs for soda pop or carbonated water.

    Use a cola for a moist and flavorful chocolate cake, or amp up the flavor of a white cake by using a fruity lemon-lime or orange soda.

    Use ¼ cup soda pop or flavored carbonated water for each egg in your recipe.


    Using a Dairy Substitute for Cake Mixes

    If using a dairy-free or vegan egg substitute isn't a concern for you, there are some fantastic options available! Not only will these ingredients help you make a cake without eggs, they will improve the flavor as well.

    Greek Yogurt

    The fat and protein in full-fat Greek yogurt help to bind the cake while the extra acidity will increase the fluffy moist texture. For the best results, use a plain, full-fat variety of Greek yogurt.

    For every egg the cake mix calls for, use ¼ cup Greek yogurt.

    Buttermilk

    Buttermilk is a great egg substitute for cake mixes. Just like yogurt, the acid in the milk increases the moisture of your cake.

    Use ¼ cup buttermilk as a replacement for each egg in your cake mix.

    If you do not have buttermilk, you can make your own by combining 1 tablespoon of lemon juice or white vinegar with 1 cup of whole milk.

    Using Liquid Eggs with Box Cake Mix

    Liquid eggs are typically a 1:1 ratio for regular eggs, regardless of their use. However, to be sure that you're using the correct amount, follow the directions on the back of the package of liquid eggs.

    Egg Substitute For Cake FAQ

    Will I achieve the same consistency using an egg substitute?

    These egg substitutes for cake mix have been tested, and should give you great results.
    Aside from this, box cake mixes include leavening agents like baking soda or powder that will also help provide structure and rise to the cake.

    Will using an egg substitute affect the flavor of a cake?

    The majority of egg substitutes do not impact the flavor of cake too much, although Greek yogurt does add a slight tanginess. However, some substitutes, such as tofu, will slightly alter the texture and consistency.
