Eggs are an essential ingredient in most baked goods. Their binding properties provide structure, and they also add moisture. In brownies, eggs create the fudgy texture we all love.

As of May 2025, the average cost for a dozen eggs in the U.S. is $6.98, and it continues to rise! If you aren't interested in raising laying hens in your back yard, you may want a more budget-friendly option. Fortunately, there are several fantastic ways to make brownies without eggs!

Budget-Friendly Egg Substitutes for Brownies
Here are some dairy-free and vegan egg substitutes. Not only are they less expensive options, they're also easy to find at most grocery stores.
Applesauce
Unsweetened applesauce is a great egg replacement for baking. When it comes to brownies, this substitute is best for a cake-like consistency.
Note: Sweetened applesauce also works, but obviously, it will make the brownies sweeter.
Use ¼ cup unsweetened applesauce to replace each egg in your recipe.

Ground Flax Seeds or Flax Meal
Whether you're using a boxed mix or making brownies from scratch, flaxseed is an excellent egg substitute.
To make a flax egg, combine 1 tablespoon of ground flaxseed and 3 tablespoons water for each egg in the recipe. Let the mixture sit for 5 minutes before using.

This substitution creates cake-like brownies with the nutritional benefit of fiber. To create chewy brownies, replace half of the water with oil.
Avocado
Mashed avocado is a great source of heart-healthy fat, and can replace the eggs and oil in boxed brownie mixes. It does alter the flavor a bit, so it works best with traditional chocolate-based recipes. This healthy substitution creates extra fudgy brownies.

Note: The acidity in yogurt may increase the rise of brownies.

However, this substitute definitely changes the overall flavor of the dessert. Many people love using this egg substitute for peanut butter brownies.

Use ¼ cup peanut butter, Nutella, or any other nut butter to replace each egg.
Vegan Egg Replacements
There are a few other good substitutes for eggs, but I don't use them as often as the ones listed above.
- Aquafaba: This is the liquid found inside of a can of garbanzo beans. It's a well-known vegan egg substitute.
- Chia seeds
- Silken tofu: Personally, I prefer to use this as an egg substitute for cake mix.
