Preheat your oven to 350° F and line two baking sheets with parchment paper.
In a mixing bowl, use a spoon to stir together dry cake mix, oil and eggs. Add sprinkles and stir to combine.
Using a medium spoon or 2-tablespoon scoop, portion cookie dough onto parchment lined baking sheet, leaving about 2 inches between each.
Bake in preheated oven for 10-12 minutes, or until the edges are just barely golden brown.
Let the cookies cool on the pan for at least 5 minutes, then transfer to a cooling rack to cool completely.
Notes
Feel free to use a different color of sprinkles. You can swap out the multi-colored sprinkles for a single color or a color combination.
Store Funfetti cookies at room temperature. They will stay fresh in an airtight container for about 4 days.Freezing: Although they taste the best when they're freshly baked, the cake mix cookies will keep for about 3 months if they're stored in a freezer-safe container or Ziploc bag. Thaw them at room temp, or pop them in the microwave to warm them up.
