    This chocolate covered strawberry cheesecake is super simple to make. This delicious cheesecake will be a hit for any celebration, but especially Valentine's Day.

    We used instant pudding to flavor this cheesecake recipe, and let me tell you, this is the absolute easiest way to make strawberry cheesecake.

    You can also change the flavor based on whichever instant pudding packet you have lying around.

    What is No Bake Strawberry Cheesecake?

    This is a no bake cheesecake recipe. There are two varieties of cheesecake, baked and no-bake (chilled) cheesecake.

    Baked cheesecake tends to be dense and smooth and chilled cheesecake is lighter. No-bake cheesecakes are made without eggs and therefore don't need to be baked.

    They are also easy to layer. No-bake cheesecakes require refrigeration to set.

    Strawberry Cheesecake No Bake Ingredients

    • chocolate graham cracker crumbs
    • butter
    • cream cheese
    • strawberry instant pudding packet
    • heavy cream
    • sugar
    • milk chocolate chips
    • sprinkles

    How to make Strawberry Cheesecake with Chocolate

    1. Line an 8 or 9-inch springform pan with parchment, and spray with nonstick spray. Combine graham crumbs and melted butter, and press them into the bottom of the pan to make a crust. Set aside.
    2. Beat cream cheese, pudding packet, heavy cream, and sugar together until smooth, and pour on top of the graham crust. Press to level. Refrigerate
    3. Microwave heavy cream for 1 minute on high, then add chocolate chips. Let sit for 5 minutes, then whisk vigorously until smooth. Pour over your cheesecake and spread in an even layer on top of the cheesecake. 
    4. Top with sprinkles, then refrigerate 4 hours or overnight. Serve as desired.

    Tips for Chocolate Covered Strawberry Cheesecake

    • Top with fruit: Top with sliced strawberries for a delicious bite of fresh fruit.
    • Allow plenty of time to set: Make sure to give it at least 4 hours to set, but it's even better to wait overnight to ensure a fully set cheesecake.
    • Whipped Cream: Top cheesecake with whipped cream and a cherry.

    Storing: Store your strawberry chocolate cheesecake in the refrigerator for up to 7 days in an airtight container.

    Ingredients

    Cheesecake Crust

    • 1 ½ cup chocolate graham cracker crumbs
    • ¼ cup salted butter melted(½ stick)

    Cheesecake Filling

    • 16 ounces cream cheese softened, 2 blocks
    • 1 3 ounce strawberry instant pudding packet you can also use any flavor you prefer
    • 1 cup heavy cream
    • ½ cup white sugar

    Ganache:

    • ½ cup heavy cream heated for 1 minute in the microwave
    • 1 cup milk chocolate chips
    • Sprinkles (to top)

    Instructions

      I cannot find strawberry pudding. Could I add mashed strawberries to vanilla pudding?

      Okay big tip... using Oreo pudding. Make sure cream cheese is VERY SOFT like put in microwave.. the beater I had struggled & made it too thick and broke apart the crust. Luckily I salvaged.. but also the video shows one cream cheese and recipe calls for 2!
