The filling of baked cheesecakes are usually creamy and dense, while no bake cheesecakes have a lighter, fluffier filling.
The fluffy cream cheese filling has no eggs, so no baking is necessary.

- chocolate cookie crumbs - I think the best chocolate cookies for making crumbs are Oreo Thins.
- butter - Because there isn't any additional salt in my recipe, I suggest using salted butter.
- full-fat cream cheese
- strawberry instant pudding mix - You'll need a 3-ounce packet of instant pudding mix. Do not use the type of pudding mix that needs to be cooked.
- heavy cream
- granulated sugar
- milk chocolate chips
- sprinkles - These are optional, but they add a festive touch to the strawberry cheesecake.
Substitutions and Recipe Variations
- cookie crumbs: If you can't find any plain chocolate cookies, you can use chocolate graham crackers, or scrape the filling out of chocolate sandwich cookies. Of course, plain graham crackers, or vanilla or lemon cookies are good substitutes, too.
- salted butter: If you use unsalted butter, I suggest adding ¼ to ½ teaspoon of kosher or sea salt to the cheesecake filling.
- white granulated sugar: To cut down on the calories of the chocolate covered strawberry cheesecake, feel free to use a cup-for-cup granulated sugar substitute. Monkfruit sugar is a good option.
- strawberry instant pudding mix: If you can't find strawberry, you can substitute it with any flavor of instant pudding mix.
- milk chocolate chips: Semi-sweet and dark chocolate chips will also work.
How to Make Apple Crumble Bars

- Make the crust. This crust doesn't have to be baked. Just combine the melted butter and chocolate crumbs together in a bowl, then press the mixture into the springform pan.

- Make the strawberry cheesecake filling. It's best to use an electric mixer to whip the cream cheese mixture. Otherwise, it tends to be lumpy.

- Chill the cheesecake. The filling needs to chill for at least 2 hours before covering the cheesecake with chocolate ganache.

- Bake in preheated oven for 15-20 minutes. When the apple bars filling is bubbly, and the streusel topping is golden brown, remove the baking dish from the oven.
Liz's Tips for the Best
- For the best consistency, chill the cheesecake for at least 2 hours, and preferably overnight.
- To cut clean slices, before cutting each slice, dip a sharp knife into a glass of warm water, then use a paper towel to wipe the water off.
Storing
Storing: Store your strawberry chocolate cheesecake in the refrigerator for up to 5 days in an airtight container.
Freezing: Because dairy products don't freeze very well, I do not recommend freezing the chocolate strawberry cheesecake. However, if you want to try, be sure to wrap it tightly in a layer of plastic wrap, then cover that with a layer of aluminum foil.

No Bake Chocolate Strawberry Cheesecake
Ingredients
Cheesecake Crust
- 1 ½ cup chocolate cookie crumbs or chocolate graham cracker crumbs
- ¼ cup butter melted (½ stick)
Cheesecake Filling
- 16 ounces cream cheese softened
- 3 ounces strawberry instant pudding mix
- 1 cup heavy cream
- ½ cup granulated white sugar
Ganache:
- ½ cup heavy cream heated for 1 minute in the microwave
- 1 cup milk chocolate chips
- candy sprinkles for garnish
Instructions
- Line an 8 or 9-inch springform pan with parchment paper, and spray with nonstick spray. Set aside
- In a medium bowl, stir the chocolate crumbs and melted butter together.
- Press the mixture into the bottom of the springform pan to form a crust. Set aside.
- Using an electric hand mixer and large bowl (or stand mixer), beat cream cheese, pudding mix, heavy cream, and sugar together on high speed until smooth
- Pour cheesecake mixture over the graham crust, then use an offset spatula to smooth into an even layer. Transfer strawberry cheesecake to the refrigerator to chill.
Chocolate Ganache
- Microwave heavy cream in a microwave-safe bowl (I used a glass measuring cup) on high power for 1 minute.
- Add chocolate chips to the hot cream and let it sit for 5 minutes, then whisk until smooth.
- Pour ganache over the cheesecake and use an offset spatula to spread evenly over the top of the cheesecake.
- If desired, add candy sprinkles over the ganache.Refrigerate chocolate covered strawberry cheesecake for at least 4 hours before serving.

Okay big tip... using Oreo pudding. Make sure cream cheese is VERY SOFT like put in microwave.. the beater I had struggled & made it too thick and broke apart the crust. Luckily I salvaged.. but also the video shows one cream cheese and recipe calls for 2!
