Line a small, 1.5-quart rectangle dish or 8x8 glass dish with parchment paper.
Place your unwrapped peppermint discs in a sealed baggie. Crush with a rolling pin or other solid objects.
In a medium bowl, add the white chips and frosting.
Microwave on high for 1 minute. Stir and microwave again for 30 seconds to a minute, as needed.
Stir well and add half of the crushed peppermint discs. Stir well one more time.
Pour the mixture into the prepared dish and spread evenly.
Sprinkle the rest of the crushed peppermint pieces over the top and lightly press them into the fudge mixture.
Chill for 45 minutes or until solid.
Allow to thaw a bit, then slice and serve. Enjoy!
Notes
Add peppermint extract - Want even more peppermint flavor? You can add a teaspoon or two of peppermint extract.
Add food coloring - If you want to add a pretty color to your peppermint fudge, you can always add pink or red food coloring.
Use candy canes - During the holiday season, there are tons of various flavors of candy canes. If you want to mix things up, you can use your favorite flavor of candy cane in place of peppermint discs.
