Instructions
Preheat the oven to 400℉ and line a baking sheet with foil. Spray the foil with non-stick cooking spray.
Arrange the crackers in a single layer on the foil, then set it aside.
To a medium sauce pan over medium heat, add butter and sugar. Whisk continuously to melt the butter and dissolve the sugar. Bring the mixture to a boil and let it cook for 3-5 minutes. Remove pan from heat and stir in the vanilla extract.
Pour the butter mixture over the crackers. Use an offset spatula or butter knife to spread it into an even layer, being sure to cover all of the saltines.
Place the pan of crackers in the preheated oven. Bake for 5 minutes, then remove from the oven. Let the crackers cool on the pan for 10 minutes.
Meanwhile, melt the chocolate in the microwave, stopping every 20 seconds to stir the mixture. This helps to prevent it from burning.
Pour the melted chocolate over the crackers and use a spatula to spread it out in an even layer. Top with sprinkles.
Chill the cracker candy in the refrigerator for at least 1 hour, or until hardened. Use a sharp knife to cut the bark into smaller pieces.
Notes
The only tricky part to making toffee is knowing when it's reached the hard crack stage. Using a candy thermometer is helpful, but if you don't have one, that's okay (I don't!). Just be sure to bring the mixture to a full boil, and let it cook for 3-5 minutes.
Use nonstick foil. Using nonstick foil sprayed with non-stick cooking spray helps ensure easy removal of the cracker candy, and it's easier to clean up.
The toffee is thin, so spread the mixture into an even layer, being sure to cover each of the crackers. An offset spatula helps with this.
When it comes out of the oven, be sure to let the candy cool on the pan for 10 minutes.
For the cleanest slices, cut or break the bark into pieces while it's still cold, straight out of the fridge.
To make this treat for other holidays, swap out the Christmas sprinkles. Use pink and red sprinkles for Valentine's Day, pastels for Easter, green and white for St. Patrick's Day, or black and orange for festive Halloween treat.
