Preheat the oven to 350 degrees F., and grease a 9x5 loaf pan.
In a large mixing bowl, use a stand mixer or electric hand mixer to cream together the eggs, sugar, and butter.
Add in the milk, cinnamon, vanilla extract, and baking soda. Mix well.
Add the flour to the wet ingredients, then mix until just barely combined. *Avoid over mixing, which can cause the quick bread to be dry and crumbly.
Use a mixing spatula to gently fold in the apple pieces.
Pour the batter into the greased loaf pan, spreading evenly in the pan.
Bake at 350℉ for 45-60 minutes, or until a toothpick inserted into the center of the bread comes out clean or with a few moist crumbs.
Notes
Use any apples you like - The best part of this bread is that you don’t have to use any specific type of apple. Use up whatever you have on hand.
Thin out the batter - If your batter seems too thick, add a bit of milk or water to the mixture. Adding a bit at a time until you reach the proper consistency.
Thicken the batter - If the batter seems thin, you can add more flour, 1 Tablespoon at a time, until it’s just right.
