    Death by Chocolate Ice Cream Sandwich Cake

    If you’re a huge chocolate lover, this Death by Chocolate Ice Cream Sandwich Cake will have you head over heels. Layers of triple chocolate ice cream sandwiches are placed between layers of Oreo cookies and chocolate ice cream. It’s then topped with more Oreo cookies, loads of creamy whipped cream, and chocolate syrup.

    There is no sweeter way to die than by chocolate, am I right?! As a chocolate lover myself, I look for any and every opportunity to make my Death by Chocolate Ice Cream Sandwich Cake (or any chocolate dessert, for that matter). The process of making this dessert alone is enough to have your mouth watering and it’s hard to be patient through the freezing process. It is one amazing way to end a long and hot day. 

    When I whip up this recipe is when I can really take time to show off my inner chocolateer to my friends and family. I can’t tell you how many times people have begged me to make this easy ice cream cake. It never fails to be a hit. Some other chocolatey desserts we enjoy include my Easy Fudge and some Vegan Orange Chocolate Truffles.

    How to Make Chocolate Ice Cream Sandwich Cake

    Prep the pan - Line the loaf pan with parchment paper.

    Add the sandwiches - Line the bottom of the pan with ice cream sandwiches.

    Add the ice cream - Add a layer of the chocolate ice cream on top of the sandwiches.

    Add the Oreos - Place the Oreos in a baggie and crush them. Sprinkle half of them on top of the ice cream.

    Repeat - Start with more sandwiches, then the ice cream, and more Oreo pieces.

    Freeze, top, and serve - Freeze for two hours. Remove, top with whipped cream, chocolate syrup, and more Oreo pieces. Serve immediately (before it melts) and enjoy!

    Tips and Variations Ice Cream Cake

    • Storage - Store in the freezer covered with plastic or a cake keeper for up to 2 weeks. Do not store in the fridge or pantry as it’s not cold enough.
    • Use other flavors of ice cream - If desired, you can switch up to any flavor of ice cream you wish! I sometimes like to use mint ice cream or butter pecan. Whatever tickles your ice cream fancy. 
    • Use other pans - I use a loaf pan, but you can use whatever pan you have on hand. Just make sure it’s deep enough to at least handle two layers of sandwiches and ice cream. You’ll just want to cut the ice cream sandwiches to suit your pan size.
    • Use other toppings - For this ice cream sandwich cake, you can use any toppings or additions you desire. Try pieces of your favorite chocolate candy, chocolate chips, hot fudge, etc. 
    • Don’t skip the parchment paper - Believe me, I’ve skipped using it before and was kicking myself later on. The parchment paper is your best friend for this ice cream cake. If you don’t use it, ingredients could stick to the pan, destroying your work of art!
    • Make your own whipped cream - Homemade whipped cream has a ton more flavor than the store-bought kind. Make your own homemade whipped cream for a more personal touch. You can even make the whipped cream chocolate!

    Ice Cream Sandwich Cake, 9x13 Pan?

    Yes, you can definitely use a 9x13 cake pan. You just need to adjust the ice cream sandwiches and amounts to fit into the pan. There are several ways you can make this dessert. I have made it in a loaf pan and even a casserole dish. As long as you can carve the sandwiches to fit nicely in your pan, the sky's the limit on what you can use to shape your cake.

    Does Ice Cream Cake Have Cake in it?

    Yes and no. For this recipe, the sandwiches contain cake-like ingredients, but it is more of an ice cream based dessert. It does, however, take the shape of a cake. With all of the delicious layers and toppings, it just makes sense to call it a cake!

    Ingredients

    • 10-12 chocolate ice cream sandwiches
    • 24 ounces chocolate ice cream softened
    • 12 ounces cool whip
    • 12 oreo cookies
    • ¼ cup chocolate syrup

    Instructions

    • Line a loaf pan with parchment paper.
    • Place about 5-6 ice cream sandwiches in the bottom, width wise. You may need to trim a touch off the end of each sandwich if your pan tapers.
    • Take half of the softened ice cream and spread it even on top of the sandwiches.
    • In a small baggie, place the Oreo cookies and smash them into large chunks using a rolling pin or similar tool.
    • Sprinkle about half of the Oreos on top of the ice cream.
    • Repeat the steps starting with the sandwiches.
    • Freeze for two hours or until solid.
    • Remove from the pan using the parchment paper and place on a serving tray.
    • Top with whipped cream, chocolate syrup, and more Oreo chunks if desired. Serve immediately.
